Rice in the Vietnamese cuisine

 

To say so vivid, that someone is dying or very sick, Vietnamese often uses the phrase "he does not want rice, he wants to taste the earth." To speak of an unfaithful husband, it says: "it is enough rice, he wants to taste soup." A happy man is compared to "a rat in a pot of rice."

Rice, essential cultural reference of Vietnam, is the staple food of the inhabitants of North and South. Rice is at the table from morning to night, from January to December, in the countryside or in the city. The meal of a peasant family usually consist of three dishes: rice, vegetables and a little meat or fish. The good rice is a precious gift that people of the country offer their urban relatives and friends when they visit. It seems that in Vietnam a long day is like a day without rice.

Rice powder as an ingredient of a great number of dishes (spring rolls, dumplings, pancakes, Tonkinese soup, noodles, rice cake, rice cake etc. ...). Rice can be full, round, long, crushed, fragrant, sticky etc.. It may come from the delta or mountains, summer or winter crop harvests. It may be old (harvested the previous year) or new.

Rice, therefore, brings the familiarity of home. As the saying goes, “rice is mother”, it touches one’s heart with trust and welcoming warmth. It is perhaps a Vientamese version of the idea “ there’s no place litke home” embedded in the tiny, white grains is the history and cultural roots of an entire nation.
